peach basil popsicles

July has been a much hotter place to be than June.  And my deck herb garden is rife with basil.  And the farmers markets are rife with peaches.  So a peach basil popsicle was basically meant to be as far as July is concerned.  True story.  These are not sticky sweet popsicles (although you could adjust to make them sweeter) so Fletcher wasn't a huge fan.  Rowan ate hers right down, though.  So 50% kid approved.  100% adult approved, so that's the good news!  And only 4 ingredients.  Easy.

3 ripe peaches
1 bunch basil (1/4 cup chopped)
1 1/2 cup milk (coconut, almond, or regular)
2 T honey
makes 10 small popsicles
 Peel and chop your peaches.  Chop up your basil while you're at it.  Set aside half a peach.
 Throw all your ingredients into a blender!  I used my blender stick.  It's my favorite kitchen tool, by the way.  I use honey because I like the flavor (and local honey is so so good for you, ok?).  If you prefer you could use sugar or sugar substitute instead.
 After your mixture is blended, chop your set aside half a peach into small chunks and add into the mix.  I like to have the little fruit pieces in my popsicles.  If you prefer a completely blended popsicle, go for it.  Pour the mixture into popsicle molds (or paper cups with sticks if you don't own a set).
Freeze at least 4 hours or overnight.  Run your molds under water briefly, and they should pop right out.
Could it be any easier?  And these taste so summery and light.  I ate one for breakfast, is that wrong?  If it is, then I don't want to be right.

  2. Haha, seeing you use the blender brings me back to last October and making curry soup. Fun times! Tell me about that stick blender--I'm kitchen appliance illiterate. Is it powered or do you use manual force? I love new innovations once I learn how to use them! Delicious looking treats too! We've been going peach-fuzz crazy over here too!

    1. It's powered, and you really should invest in one. No more soup in the blender (and on the walls)! You can blend it right in the pot you're cooking in!!

  7. These look so good! I love pretty much anything with peaches in it. What type of milk did you use personally? I have yet to try almond or coconut milk. :)

    1. I used regular old cow's milk, because it's what I had on hand. Coconut milk makes a really tasty popsicle, though!
