pumpkin spice nutella muffins

Oh yes, you heard me.  Pumpkin + Nutella = GOOD.  No, GREAT.  So I've recently been accused of being a little too "Martha" with my recipes.  Well, this recipe uses 3 main ingredients.

Yep, that's all you need.  Well, and I DID add pumpkin pie spice and cardamom, but you don't have to if you want to keep it simple.  I got this idea off of pinterest where they have a recipe floating around with just cake mix and canned pumpkin.  You don't need eggs or oil because the pumpkin does all the moistening.  How great!  But since I can't leave well enough alone, I decided to add Nutella to the mix.  So here's the official ingredient list:

1 box yellow cake mix
1 can pumpkin
1 c Nutella (I'm guessing here)
2 t. pumpkin pie spice
1 t. cardamom

Dump that box of cake mix in a big bowl.  Add your spices.
Mix in the can of pumpkin.  Spoon mixture into muffin tins to about halfway full.
Spoon about 1/2 T of Nutella on top.
Cover with another T of the cake batter.
You want to kind of spread your top layer of mix over the Nutella area.  It does NOT need to be perfect.  You don't want to completely cover the Nutella.  A peek of it lets everyone know just how special these muffins are.  Bake at 350 degrees for about 15-18 minutes.
This made 18 muffins for me.  You could make them a bit smaller and try and stretch it to two dozen. 
We shared one between the four of us after dinner, and then I packed up the rest for Brian to take to work yesterday.  They were a big hit, and he brought home an empty container.  Oh, and if you're feeling sorry for me for only tasting 1/4 of a muffin, don't worry.  I got to lick the spoons!

  1. Why and how could you only eat a fraction of one of these bad boys? I think if I made them, I would overdose. :) Maybe that was a good idea sending them to Brian's work. Yummy yum, thanks for that thanksgiving idea!
