quick + easy greek pizza

Happy Independence Day (for you US Americans, that is)!  Nothing celebrates America like Greek Pizza.  Am I right?  No?  Well, too bad because that's what's cooking today.  Or last week, but is posting today.  ANYWAY.  Greek pizza!  I'm sure somewhere people have made this.  It's probably all over the interwebs, but it was like a lightbulb went off over my head when I opened the fridge to find feta and Pillsbury's pizza dough.  Yes, I make "homemade" pizza and cheat with the dough.  Sorry!  I did say in the title that this is "quick."  It was quick AND super tasty!  So to make your own, go grab these ingredients:

Pizza dough of your choice
2 large tomatoes, sliced thinly
1 6 oz package feta cheese, diced
1/2 cup chopped kalamata olives
1 small or 1/2 large cucumber
1/2 red onion, chopped (not used here, but it belongs)
3/4 cup Greek yogurt
3 T lemon juice
3 t oregano
2 T white wine vinegar
fresh dill for garnish
serves 4-6

Preheat your oven according to pizza dough instructions.  Roll out dough and pre-bake for 5 minutes.  While the dough is baking, press your tomatoes with paper towels to rid them of excess water.
Spread tomatoes over the dough.
Sprinkle the feta and the olives over your tomatoes.  Shake a bit of oregano over the whole pizza.
Bake for 10- 15 minutes, or until dough browns.  In the meantime, whisk together the yogurt, lemon juice, vinegar, and remaining oregano.
Pour your yogurt mixture into a ziplock bag, squeeze out extra air and zip shut.  When the pizza is finished, take it out of the oven and sprinkle the chopped cucumber on top. 
Now cut the very tip of the corner of your ziplock bag, and squeeze the yogurt mixture out, drizzling the entire pizza in stripes, or zig zags like I do.
Or you could write something.  Like: Happy 4th of July!  Or: This is Greek Pizza!  Or: Eat me!  Or: If you add Feta and Kalamata Olives, anything can be Greek!  Well, that one might be too long.
 I add a bit of fresh dill to the whole thing and that's it!
Dish it up, and enjoy.

  6. THAT LOOKS DELICIOUS. And I have always managed to screw up even Pilsbury pizza dough- do the instructions tell you to pre-bake (before toppings)? Could I be such a screw-up because I can't read? Hmm. Thank goodness for your beautiful picture instructions. Hopefully the center of my pizza will cook the next time I make it...
